Under Construction
This is one of our go-to chili recipes. My grandparents clipped it out of a trade magazine and shared it with us several years ago.
It is so damn good and simple. No beans, just meat, garlic, onions, tomato, and seasonings. This chili stands on it's own just fine. It also makes a great base recipe to add just about anything and make it your own.

Joe and Marie came over with a three pound deer roast that Joe had been in brine for several days. Our mission was to season and smoke it on my pellet smoker. While we were doing that Wendy and Marie went out to the woods and picked some beautiful chanterelle mushrooms.
The next day I made this sandwich from some of the pastrami Joe left us. I also roasted potatoes and peppers from our garden along with some of the chanterelles. The flavor of everything turned out perfect. It tasted just like October.
The roast we smoked was from Joe's deer last year. His plan was to take the rest of the pastrami with him to deer camp that weekend and share with his hunting buddies. I haven't heard how it went over but I'm guessing they enjoyed it at least as much as I did.
